Thai Chicken Soup
Delicious.
I add some fresh cilantro/coriander to it. Also some chinese mushrooms and bamboo shoots (both from can) And lots of lime juice.
recipe here . Just made it in a pot on the stove - no pressure cooker.

Spinach & Coriander Soup

| 1 spray(s) cooking spray | |
| 2 medium onion(s), chopped | |
| 2 medium uncooked potato(es), peeled and chopped | |
| 2 clove(s) (medium) garlic clove(s), finely chopped | |
| 1 tsp coriander seed(s) | |
| 5 cup(s) vegetable broth | |
| 6 oz spinach, baby leaves | |
| 2 Tbsp cilantro, fresh, roughly chopped (a small bunch) | |
| 1/8 tsp table salt, or to taste | |
| 1/8 tsp black pepper, or to taste |
Instructions
- Coat a large saucepan with cooking spray and heat over medium-high heat. Stir-fry onions, potatoes, garlic and coriander seeds for a few minutes. Add a couple tablespoons of water, reduce heat to low and cover pan.
- Leave to 'sweat' until onions are soft, about 15 minutes.
- Add broth, spinach and cilantro; cook for 10 minutes more. Puree soup in pan with an immersion blender (or puree in batches in a blender but be careful not to splatter hot liquid). Season to taste and serve.

Celeriac Soup


This is quite yummy. I guess any soup with potato in it is. I like celeriac but have never cooked with it. In fact, I don't think I even knew what it looked like raw. Landmarc, a local restaurant does a great lamb shank with celeriac mash. Lovely. I wanted to make something we could have for dinner, so as much as I love a good mash, I decided to do a soup.
You'll need
1 x celeriac
potatoes (use at least 4 but prob up to 8 depending on how many people and how strong a taste of celeriac you want)
1 x onion
1 x stock cube
grated ginger - heaped teaspoon (optional)
Brown the diced onion for a few minutes and then add the potatoes and celeriac chopped up (sliced or chunks). Stir around for a a few minutes and then add about 4 cups (i find i am always adding 4 cups of liquid) of veg or chicken stock. (if you add ginger, add it before the stock)
Let it simmer away for about 1/2 hour or until everything is nice and soft and then blend with immersion blender. Quite lovely. I added some sour cream, and a little bit of oil. Picture looks gross but trust me, it's a goody.

Spinach Soup

Today's soup is really earthy.
You'll need
1 x onion chopped
4 x potatoes thinly sliced (use as many as you want)
Bunch of spinach (or two, depends what you have)
Cabbage - optional
Tin of crushed tomatoes
4 cups of stock
Fresh nutmeg (optional)
Brown the onions, add the potato slices and stir for about 5 minutes
Add the stock and the tomatoes and cabbage
Let cook for about 20 minutes (or 10 if in hurry). Add shredded cabbage if you want.
Add spinach
Blend for smooth soup, or eat as is for a chunkier style
I grated some fresh nutmeg on mine and then added some more spinach to the soup.
Not the most outrageously delicious soup, but tasty enough and healthy. Most of the ingredients came from my Urban Organics box.

Oil On Soup
I always see the chefs on tv do this, that is, dribble some oil on the top of soup. I always thought it gross, but I am now obsessed. It's especially good for a thicker, blended soup (don't do it for a broth) as it's pretty much just one flavour. It just adds another level, or dimension. Your oil shouldn't be the really cheap stuff as you can actually taste it. Try it, I love it. I have a pourer on my olive oil bottle, if you don't I would pour oil onto a teaspoon and then use that to dribble it round in a circle. Straight from a bottle may result in an overpour. Ok, now off to Red pepper soup.
Red Pepper, Chickpea and Tomato Soup

You'll need
Jar of cooked red peppers (use one or two peppers from it)
Onion x 1
Garlic x 2 pieces (or whatever you want)
Large tin of chickpeas
Large tin of crushed tomatoes
4 cups of chicken stock
Cumin (or whatever herb you like, I love cumin)
S/P
Fat free sour cream (optional)
* Fry onion
* Add heaped teaspoon of cumin
* Add chickpeas, stock, canned tomatoes and peppers, S/P
* Cook for 10 minutes or 1 hr - depends on how long you have
* Get immersion blender (or regular blender) and blend ingredients until smooth
* To serve, add some sour cream or a dash of olive oil on the top.
My photo is rubbish but this is delicious. I think I am going to go have a bowl now.

Salmon in Brothy Soup
Wendy made this for me once when I was in London an it was delicious. No pictures unfortunately.
*Fry onion, garlic, shallots and whatever veges you have like carrot,
red capsicum, and courgette
*Add stock, sobu or rice noodles and
pieces of poached salmon, add a bit of soy sauce and for grown ups
(as opposed to 2yr-olds), i reckon some fresh coriander and lemon
grass would be lovely.
