
I saw this on a Martha site and thought it looked crazy fun. You need one of those spring-lock pans (the ones where the bottom is released, usually used for cheese cakes and things like that). Super easy to make and besides the cheese, I am guessing not too awful for you. Anyway, if you wanted to have a bit of a Mexican themed evening, this would fit the bill. Easily feeds 6 - especially if you have a salad or something. I just served it with some sour cream and some sliced avocado . If tomatoes were in season, i might have made up a little salsa. And for an extra kick, I would have made margaritas!
