
I made this the other night. Super easy and delicious. I had so many onions for the first time in my life, so I needed something to do with them. Also got to use my mandolin which is strangely rewarding and fun to use. I cheated, I just bought pre-made pizza dough, used that as base, covered it with mustard, and then whacked the caramelized onions on top and stuck it in the oven.
The recipe calls for fennel seeds (or something else I didnt have). I thought the onions would be great on their own because of the mustard, but they just wouldn't caramelize (even after an hour in the pot). I love cumin. Stick it on everything, so added a teaspoon to the onions and that did the trick, delicious, brown, caramelized onions. I am going to make a potato and parma pizza next i think.
