Figs

Can't get enough figs. Keep meaning to do something fancy with them but just end up eating them straight from the bowl.

Here's a yummy brunch idea -- Hot Honey Figs with Ricotta on Toasted Fruit Bread

Serves 2

Prep time: 2 mins
Cooking time: 10 min

You need:

Butter
2-4 ripe figs
Runny honey
2-4 thick slices fruity bread
2-4 wedges ricotta cheese

Heat frying pan on med-high heat and add small knob of butter. Cut figs in half and sit them in pan, cut-side down. Fry for few mins until they turn golden. Increase heat and drizzle over 1tab honey and 2tab water. This gives you nice syrup. Turn figs over and cook for 30secs, then remove pan from heat. While figs are cooking, lightly toast the bread and place ricotta and figs on top. Spoon over the syrup you made. Add extra honey if you want.

Seriously yummy!!
