I'm not one for doing roasts. Not sure why. Love them, but never cook them. Caro and Matt do their roasts in a pot, and when we were back in Oz we had it - so delicious. I did it on the weekend using recipe below. Couldnt have been easier and so delicious -- not even a bit dry.

i do roasts all the time -- so much so, i'm kinda sick of them! They're just so easy; once you pop everything in the oven you can just leave it and let it do its thing. Tonight is my last working shift before bubba's arrival -- so forgive me if my comments become even less regular. Much easier to find time at work to comment, than at home. xxx

as for pot roasts we love em. now that we have an oven we still use the pot as nothing is so tender.
