Bold & Beautiful

This is for Caroline. I can't imagine anyone else being interested but I have just sat down to watch my daily dose of Bold, and they are heading to Sydney. Brooke is already there, and now Ridge and Phoebe and Rick are boarding the Forrester jet to join her. will keep you posted on where they go. So far Brooke has marvelled over the beauty of the bridge....

Another Roasted Tomato Recipe



Baked Tilapia with Roasted Tomatoes, French Beans and Zucchini


What you need:
White fish (such as tilapia)
Punnet of cherry tomatoes
French beans
Zucchini
Spinach

In terms of quantity, just estimate based on the number of people you are cooking for.

1. Tomatoes
Roast them in the same way explained in the pasta recipe below

2. Fish
Place it into a baking dish. Season with salt and pepper and/or anything else you might like. A little curry powder might work well. Stick the dish in the oven for about 25 minutes at 350F/180C.

3. Veg
Steam or boil your beans and zucchini. When they are done, mix them in with the roasted tomatoes and stick in the oven for a minute or two while you wait for the fish to be done.

4. Spinach
Wilt the spinach.

Plating. Make a bed of spinach on each plate, place a piece of fish on the spinach and then top with the tomato/bean/zucchini mix.

That's it. Yum.

Roasted Tomatoes



I'm obsessing over roasted tomatoes at the moment, and have made two great recipes that i thought you might like.

Pasta with roasted tomatoes, sauteed mushrooms, pinenuts and basil

This is great and really easy to do. You basically prepare the separate ingredients and then mix it all in at the end. I think spaghetti works best with this recipe.

1. Tomatoes
Get a tub or two (depending on how many of you there are) of cherry tomatoes. Cut them in half, put them on a roasting tray, spray with a bit of oil (optional), sprinkle with salt and pepper and pop in the oven. Just keep an eye on them.

2. Mushrooms
Slice up your mushrooms (again, as many as you want) and saute them in a pan either dry or in a bit of olive oil. After a minute or two, slowly add a cup of wine (don't do this all at once, add liquid, mix, add etc). This will probably take about 5 minutes.

3. Pine nuts
When the tomatoes are done, take them out and while the oven is still on, put a tray of pine nuts in. This will only need a minute or two. Much longer and they will burn.

4. Basil
Get a bunch of basil and just cut it up.

Once you have all the ingredients prepared, and the pasta is cooked, just mix all the bits together and serve.
